Raw Sour Cream and Onion Kale Chips

These kale chips are TO-DIE-FOR. Seriously, I could sit down with the whole batch and eat all of them!
Kale chips are a great alternative for junk food, chips and snacks. They satisfy taste, hunger and nutrient needs.

Ingredients:

1 1/4 cups raw cashews, soaked for 2 to 3 hours (don’t want to break the bank? try  3/4 cup raw cashews and 3/4 cup sunflower seeds)

¼ cup lemon juice

1 Tbsp raw apple cider vinegar

1/4 tsp sea salt

1 small red onion, sliced thin on a mandolin

1 head of green kale

1/4 cup filtered water

Directions:

  1.  Starting at the bottom of the kale, strip away all leaves leaving behind only the stems. Tear leaves into approximately 2- to 3-inch pieces.
  2.  In a blender, combine the soaked cashews, lemon juice, vinegar, salt and 1/4 cup water until creamy and smooth. Sauce should be the consistency of a salad dressing. Add more water if necessary.
  3.  Using mandolin, thinly shave red onion. Toss the sauce with the kale and red onion until thoroughly combined and lay out on dehydrator sheets. Dehydrate at 105 degrees for approximately 12 hours or until crispy.

Cilantro Pesto Cubes (vegan)

Cilantro is one of the best ways to detoxify the system. This cilantro pesto is the best ways to consume this super herb. Don’t miss out on this mouth watering recipe!

INGREDIENTS:

  • 1/3 cup whole almonds (with or without skin)
  • 1/3 cup Mexican pumpkin seeds (pepitas)
  • 1/3 cup cashews
  • 2 cups packed cilantro, large stems removed
  • 3 garlic cloves
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon crushed red pepper (optional)
  • Water if needed

DIRECTIONS:

  1. In a food processor or blender, process the almonds until they have turned into fine crumbs. (vita mix is best)
  2. Add the remaining ingredients and process until smooth. Scrape sides a few times
  3. Scoop with spoon into ice cube trays.
  4. After frozen, pop the cilantro pesto cubes out of the trays and place into a freezer plastic bags.
  5. Use all year round! Grab some out of the bag for dips, seasonings and sauces!

Chocolate Walnut Wellness Green Smoothie

-Serves 3

Ingredients:

2 large handfuls greens (butter lettuce) 6-8 cups

1 cup water or plain almond milk

1 cup strawberries

2 bananas

2 TBSP raw cacao

2 TBSP chia seed

1 TBSP lucuma

2 TBSP chocolate protein

6 ice cubes

  •  Optional boosts:

Omega 3’s : 1 TBSP flax seed

Creaminess: 1/3 tsp xanthium gum

Probiotics: 4 Kefir cubes

Blood sugar regulation: 1 tsp cinnamon

Sweetness: 6 drops vanilla cinnamon

Ingredients:

1 cup spinach (packed)

½ cup water or almond milk

½ cup raw walnuts

1 TBSP Flax seeds

1 tsp Cinnamon

1/2 cup frozen cranberries

5 strawberries

1 pear

½ banana

Want a boost? Add a cup of dandelion greens and TBSP Spirolina!

Directions:

Bend until smooth greens, liquid and nuts.

Add other ingredients and blend smooth

  • 2 cups spinach
  • 1 kale leaf
  • 1 carrot
  • 1 cup water
  • ½ cup yogurt or coconut milk
  • ½ avocado
  • 1 frozen banana
  • 1 cup tropical frozen fruit mix
  • 1/3 lime
  • 1 TBSP flax seed

Directions:

  1. Place all ingredients in the blender until smooth.
  2. Pour in favorite cup.
  3. optional coconut flakes to sprinkle on top.
  4. Enjoy!

Dandelion Greens, orange peppers and roasted beets w/ orange and mint.

 

This salad has wonderful detox elements. It is perfect for a spring meal and to enhance your system, detox and get more energy! Bright, fresh and warm!

Ingredients:

  • 1 orange pepper chopped
  • ½ orange chopped
  • 2 tsp coconut oil
  • ½ tsp salt
  • ½ cup roasted beets
  • 3 cups dandelion greens (one handful)
  • 2 TBSP white Balsamic vinegar
  • 2 sprigs fresh mint, minced
  • ½ cup shredded parmesan cheese or goat
  • 1 cup cooked Quinoa

Optional: 1 cup chicken or turkey

Directions:

  1. Cook quinoa according to package
  2. Cook chicken or turkey
  3. Roast beets
  4. Warm oil in pan, add pepper, beets, dandelion greens and orange, sauté for 5 min.
  5. Add salt, mint, balsamic and quinoa to pan.
  6. Add cheese at end.
  7. Enjoy!

  • 1/2 cup cucumber
  • 1/2 cup coconut water
  • 1/2 cup coconut milk
  • 2 cups spinach
  • 1 carrot (1/2 cup)
  • 1 TBSP Flax seed
  • 10 macadamia Nuts
  • 2 dates
  • Optional: 1/2 cup yogurt or coconut milk/cream
  • 5 ice cubes

Directions:

  1. Blend until smooth.
